600g plums, stone free weight, finely diced   150g onions, finely chopped   175g  light brown sugar   2 lemons - peel only   150g dried dates, chopped (no stones)  150ml cider vinegar   a small bundle of spice (2 sprigs rosemary, 2 sprigs thyme, 1 tsp all spice and 3 cloves) tie into a muslim cloth   Pinch of salt    1 tsp Chilli flakes or fresh chilli finally chopped  2 x 250g jars or 1 x 500g jar. Bursting with well balanced flavours. Perfect to serve with a glass of bubbly before dinner. This is one of my favourite canapés. It has a perfect balance between the sourness of the lime, saltness of the salmon and the sweetness of the crème fraiche. And, the salmon roe really gives it an extra twist.
