Delicious sweet dark chocolate meets creamy local Ontario dairy to make this epic chocolate Cremeux. It’s like a super smooth and rich slightly more dense version of a chocolate mousse. Recipe,
Ingredients:
1 1/4 cups Ontario Milk 
1 1/4 cups Ontario heavy cream 
4 whole eggs 
1/4 cup sugar 
400 grams dark chocolate 

Method:
1. Chop all your dark chocolate into even sized pieces.
2. In a large bowl mix eggs, sugar, milk and cream together with a whisk.
3. Heat this mixture up over a pot with boiling water. While stirring constantly heat this mixture up to 75c or 167f

Swiss Buttercream (yield: enough for 1 8-in round cake)
6 ea (200g) egg whites*
1.5 c (300g) superfine sugar
1 lb (454g) butter, softened
fine salt
vanilla extract 

1. Add the egg whites and sugar to a heat proof bowl and set over a pot of barely simmering water. 
2. Mix the egg whites and sugar until the sugar is dissolved and the mixture reaches a temperature of 155-160F (68-71C).
3. Pour the egg white and sugar mixture into the bowl of a stand mixer and whisk on medium-high speed. (Note: many recipes have you heat the egg whites and sugar in the bowl of the mixer. I prefer to use a separate bowl for the double boiler and whisking steps in order to speed up the cooling process).

- 1/4 tsp salt
- 1/3 cup sour cream
- 1/2 cup buttermilk

Italian meringue based buttercream is one of the best buttercream that possible any home baker can use. 
This buttercream is so dreamy. You gonna love it, is not to sweet and pipes beautifully.

Add 7 cups sifted icing sugar to a stand mixer. 
In a separate bowl whisk together 1/2 cup of warm water, 6 tbsps meringue powder, 1 tbsp clear corn syrup and 2 tsps vanilla. Mix with the icing sugar on high for five mins and voila! Perfect royal icing. Stay tuned for part 2!
