Of course, espalier typically means training a plant to lie flat against a wall.  Since camellias prefer morning sun, plant against an east or north facing wall for best results.  I have found that placing galvanized mortar nails every 8 to 12 inches and connecting the branches with a cover wire tape well.  (I buy the wire on a spool that allows me to cut the length I want.)
